Our Story...
Bornstein's albacore tuna products rate among the highest quality product available. Our tuna is surface caught in coastal areas at "the cold water edge" of the North Pacific Ocean. "Surface Catch" out of these areas produces the highest oil content Albacore Tuna in the world.
Quality starts with knowing the source of supply. Bornstein's has
partnered with several of the best Albacore fishermen in the North
Pacific Fleet. Our fleet manager, Stan Lambert, has been fishing Albacore
for over twenty years, while Bornstein Seafoods is led by Jay Bornstein,
whose company has been processing seafood on the west coast for over
70 years.
Stan's boat supplies Bornstein's and he oversees procurement by contracting
with other boats from the North Pacific tuna fleet. Stan closely inspects
all albacore he buys and the logbooks from each boat to insure that
our standards are met for oil content and onboard handling of all
Albacore that is processed.
Combine catch method and harvest area with proper handling from the
boat through processing - and you get the finest finished form of
albacore tuna product in the market today. Our albacore is brought
aboard the vessel live, immediately bled and placed straight in blast
freezers within minutes of being caught. In the blast, heat is quickly
extracted and the core temperature of the whole fish is pulled down
to a minimum of -20f within several hours of being caught. Stringent
handling and rapid freezing insures that the highest quality standards
are being met. Our special on-board handling insures that our Sashimi
Grade Albacore are in perfect form in terms of color, flavor, texture
and shape before our hand-crafted canning process begins.
