Long Nose and Big Skate are the two species most abundant on the West Coast sea floor. Skate are members of the shark family as such their meat does not contain bones. However, there is a piece of cartilage running through the center of the wing. Be sure to check the smell of the wings you purchase for an ammonia smell. It is an indication of old product and is difficult if not impossible to remove. Traditionally, the "wings" are the sought after product form, however we would be pleased to meet any specification.
