Arrowtooth Flounder (ATF), or Turbot (not to be confused with Greenland Turbot, which is closer to a Halibut), is a flat fish that thrives off the Western Coast of North America. Once considered mushy, modern handling techniques including better on board temperature control and shore side freezing capabilities have made this an all star fillet in the low cost high value markets.
