Cod Fisheries off of the Coast of Oregon, Washington and California while abundant, are nothing like the larger Cod operations of Alaska. Generally caught in smaller amounts with smaller boats and nets, the Cod off of the West Coast are high quality and sought after by chefs in the know. The firm white flesh of the cod cooks up flaky and delicate and is a great alternative to halibut for menu’s and programs.
