Arrowtooth Flounder (ATF), or Turbot (not to be confused with Greenland Turbot, which is closer to a Halibut), is a flat fish that thrives off the Western Coast of North America. Once considered mushy, modern handling techniques – including better on board temperature control and shore side freezing capabilities – have made this an all-star fillet in the low cost/high value markets.
